Ingredients

·         1 1/2 pounds flank steak or sirloin, thinly sliced

·         3 cups broccoli florets

·         2 tablespoons vegetable oil

·         3 cloves garlic, minced

·         1 tablespoon fresh ginger, grated

·         1/3 cup soy sauce

·         2 tablespoons oyster sauce

·         1 tablespoon cornstarch

·         1/3 cup water

·         Black pepper to taste

·         Optional cooked rice for serving

Begin by preparing all ingredients before cooking, as stir frying moves quickly. Slice the beef thinly against the grain to ensure tenderness. Place the beef in a bowl and season lightly with black pepper. In a separate small bowl, whisk together soy sauce, oyster sauce, cornstarch, and water until smooth. This mixture will thicken during cooking. Set everything within reach to streamline the process.

Heat a large skillet or wok over medium high heat and add one tablespoon of oil. Once the oil is hot, add the broccoli florets in a single layer. Stir frequently and cook until the broccoli turns bright green and becomes slightly tender. Avoid overcooking so it retains some crispness. Remove the broccoli from the pan and set it aside. This step prevents the vegetables from becoming soft later.

Add the remaining oil to the same pan and increase heat slightly. Add the sliced beef in a single layer and allow it to sear without stirring at first. This helps develop flavor and color. After a short time, stir and continue cooking until the beef is mostly cooked through. Add the garlic and ginger and stir briefly until fragrant. Avoid cooking garlic too long to prevent bitterness.

Return the broccoli to the pan with the beef. Pour the prepared sauce over the mixture and stir gently to coat everything evenly. Allow the sauce to simmer briefly until it thickens and clings to the ingredients. Reduce heat slightly and continue stirring until everything is heated through. Taste and adjust seasoning if needed. Remove from heat promptly to maintain texture.
