Grilled Lemon Herb Chicken Skewers

Looking for a fast and easy summer recipe: Grilled Lemon Herb Chicken Skewers

Ingredients:

  • 1½ lbs boneless, skinless chicken breasts (cut into 1.5-inch cubes)

  • 1/4 cup olive oil

  • Juice and zest of 1 lemon

  • 3 cloves garlic, minced

  • 1 tablespoon chopped fresh rosemary (or 1 tsp dried)

  • 1 tablespoon chopped fresh thyme (or 1 tsp dried)

  • Salt and pepper to taste

  • Optional: bell peppers, red onion, or zucchini for skewering

Instructions:

  1. Marinate the Chicken:
    In a large bowl or zip-top bag, combine olive oil, lemon juice and zest, garlic, rosemary, thyme, salt, and pepper. Add chicken cubes and toss to coat. Marinate in the fridge for at least 30 minutes (up to 4 hours for more flavor).

  2. Prepare Skewers:
    If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread chicken onto skewers, alternating with veggies if desired.

  3. Grill:
    Preheat grill to medium-high heat. Grill skewers for about 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.

  4. Serve:
    Serve hot with a side of couscous, rice, or a fresh cucumber-tomato salad.

 

These skewers are flavorful, light, and perfect for BBQs or weeknight summer dinners!
